Berries and Cream Cookies

I was inspired to make these cookies while looking through a fundraising catalog that sold a similar product.  I searched around for a basic recipe that I could build off of and turn into a delicious fruit filled cookie recipe that was crisp yet soft and buttery.  These cookies came out much better than I could have ever hoped for.  The sweetness of fruit combined with the creaminess of the white chocolate was definitely the perfect combination. The cookies baked up so puffy and delicious. These are definitely a must try!

Berries and Cream Cookies

1/2 cup cold butter, shredded
1/2 cup light brown sugar, packed
1/2 cup white granulated sugar
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1 cup dried mixed fruit, roughly chopped
1 cup white chocolate chips

1. Preheat oven to 375 degrees. Grease cookie sheets.
2. In a large mixing bowl cream together the butter, brown sugar and white sugar until smooth. Beat in the egg and extracts. Combine the flour, baking soda, and salt; beat into the sugar mixture. Stir in the dried berries and chocolate chips and mix until combined. Drop by heaping spoonfuls onto prepared cookie sheet.
3. Bake for 10-12 minutes or until cookies just begin to brown. Let cookies cool for 5 minutes on cookie sheets before removing to a wire cooling rack.

  • Hi Amber, I just found your blog and added it to my reader. I have been making scrapbooks for about 20+ years. I have 6 grown kids and 12 grand kids and I do love to take photos! I also make greeting cards, I have been a Stampin Up demo for years, I just sell to myself and a few friends. Fun product. And I do love to cook and eat!

    I just made my first batch! turned out wonderful! i didn’t have dried fruit, so I used frozen. It bled a bit but didn’t ruin them. Great recipe! Thankss!!!!
